Lettuce Chicken



Ingredients:
250 gram chicken fillet ( chopped )
1 cm fresh young ginger ( chopped )
2 garlic ( chopped )
10 pcs water chensnut ( diced )
2 tbsp chopped fresh carrot
2 stacks spring onion ( chopped )
2 tbsp chopped green pepper

Sauce :
1 tbsp hoisin sauce
1/2 tbsp light soya sauce
1/2 tbsp oyster sauce
sugar, salt and pepper to taste
50 cc water + 1/2 tsp corn flour
1 tbsp angciu ( Shao Xing wine )

Directions:
Heat a wok over moderately high heat until just smoking, then add oil. Add garlic and ginger, salt, and 2 tablespoons spring onion and stir-fry until is fragrant.
Add chicken and stir-fry until just cooked through, about 2 minutes. Add water chestnuts, green pepper, carrot stirr well then add hoisin sauce,angciu, and other sauces, stir-fry until heated through, about 1 minute. Transfer to a bowl and sprinkle with remaining 2 tablespoons spring onion.

Have guests serve themselves by spooning chicken mixture into lettuce leaves and wrapping leaves around filling to enclose.
